Responsible Sourcing
It’s not just where we source that’s important, it is how we source. As well as protecting the Provenance of our food, being a responsible business means being a fair and trusted partner to farmers and growers over the UK, whilst also taking care of the world’s resources. It is a sad fact that our ocean and fish stocks are at risk, so we have a responsibility to manage them carefully. That is why all of the fish used in our dishes are caught in line with the Marine Stewardship Council (MSC) Guidelines. In fact working with our supplier we can trace our fish right back to the boat or farm they came from. Our meat is UK (locally sourced) and Farm assured which means animals that have been fairly treated and have been given freedom to behave in a natural way.
Provenance & Seasonality
We are very privileged to work in a bountiful part of England. We source locally in Sussex and from neighbouring counties Kent and Sussex. You will often find us at Convent Garden Market buying our fresh fruit and vegetables and most of our meat comes from a local butcher in Lingfield. Some of our herbs are grown on site, and we use wine from a vineyard in Sussex. Now you don’t get more local than that.
