LOW FAT FOREST FRUIT SPONGE

SERVES 6-8 PEOPLE

Ingredients
Sponge
3 eggs
115g Caster sugar
75g Sifted plain flour
15ml Boiling water

Topping
200g Icing sugar
1000 berry mix frozen
Low fat crème fraiche


Method
Preheat oven to 200 C/400 F/Gas 6
Grease a baking tray 12x8inchs then line with non-stick baking parchment
Place berries in a pan and add icing sugar and simmer gently for 3 minutes and leave to cool
Whisk together the eggs and sugar until thick (like mousse)
Fold in the flour carefully with a metal spoon and then add the boiling water the same way
Spoon the mix into the cake tin and spread evenly
Gently place the fruit mix on top of the sponge mix
Bake in the oven for 12-15 minutes
After taking out of the oven leave to cool as the topping will be very hot
When cool portion and serve with a good spoonful of crème fraiche
